Foie gras is a well-known and popular special in French food. Its taste is referred to as rich, buttery, and delicate, unlike that of a normal duck or goose liver. Foie gras is sold entire, or is prepared into pate, mousse, or parfait (the most affordable quality), and could likewise be worked as an accompaniment to another food product, such as steak. French law states that "Foie gras belongs to the secured cultural and gastronomical heritage of France.
